Creamy layers of avocado and vegan mozzarella sandwiched between buttery toasted sourdough, slathered in pesto. Can you go wrong?
This grilled cheese is so simple to make. It was almost too easy to require a recipe, but at the same time it was too good not to create one. I want you all to enjoy this grilled cheese as much as I do!
Get creative with the cheese selection! If you can’t find vegan smoked mozzarella, any type of melty vegan cheese would be good in its place, especially a smokey gouda.

Green Grilled Cheese
4 slices sourdough bread
1/4 Miyoko’s smoked mozzarella wheel (or other cheese of choice)
1 avocado, sliced
1/4 c baby spinach
4 T pesto (homemade or store bought)
2 T vegan butter
Method:
1. Slice cheese into thin pieces.
2. On one slice of bread add 1 tablespoon of pesto, then layer 1/2 the mozzarella slices, half the spinach, and half the avocado slices. On the top slice of bread, add another tablespoon of pesto.
3. Repeat step 2 to build the second sandwich.
4. Heat a skillet over medium. Add 2 tablespoons of vegan butter and melt.
5. Cook grilled cheese for about five minutes on each side, until the bread is golden and the cheese is melty. I like to set a smaller pan lid on top of the sandwich to help melt the cheese.
6. Cut in half and enjoy!
