As someone who is always hungry and always needs dessert after lunch, I like to keep a healthier option that hits the spot easily accessible at all times. I’ve been hitting the leftover halloween candy hard for the last month, but it more often than not leaves me unsatisfied and with a stomachache (a handful of airheads later). These chocolate chip pumpkin bites leave me happy and satisfied, a nice little snack with chocolate, protein, fat, and all the good stuff.
Pumpkin Chocolate Chip Balls
Ingredients:
1/2 c rolled oats
1 c raw walnuts
2 T pumpkin purree
1/3 c pitted dates
1 tsp vanilla
1/4 c semisweet or dark chocolate chips
1/2 tsp pumpkin pie spice
Method:
1. Add oats to your food processor. Blend or pulse until they turn to a flour consistency. Remove and set aside.
2. Add walnuts to the food processor. Blend or pulse until they turn into a flour-y nut meal consistency. Set them aside in the same bowl as the oat flour.
3. Add dates to the food processor and pulse until they are in tiny pieces or form a ball. Add the oats and walnuts mixture, vanilla, pumpkin puree, and pumpkin pie spice. Process until the mixture forms a sticky dough. Add in chocolate chips and pulse a few times until the chips are folded in evenly.
4. Place the mixture in the freezer for 5 minutes. Remove from freezer and form into balls. Store in fridge for 1 week, or freeze.
